QUICK COFFEE CAKE 
1 1/2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1 egg (or egg beaters 1/4 c.)
1/4 c. oil
3/4 c. milk
Raisins (opt.)

TOPPING:

1 tbsp. flour
1 tsp. cinnamon
1 tbsp. oil
1/4 c. brown sugar
1/2 c. chopped nuts (opt.)

Mix first ingredients together by hand. Pour in greased 8 x 8 inch pan. Mix topping together with fork, sprinkle over top of batter. Bake at 375 degrees for approximately 30 minutes until corners pull away from the pan. Freezes well.
