DRIED BOLOGNA 
1/2 tub hamburger (30 lbs.)
1 tbsp. ginger
1/2 tbsp. allspice
1/2 tbsp. cloves
1 tbsp. pepper
2 c. salt
4 med. onions
Sheep or pig casings

Chop onions fine. Mix all ingredients into hamburger well. Use natural casings. Fill casings into ring bologna. Hang in dry place for 3 weeks.
