CORN CRISP CHICKEN | |
1/2 c. saltine cracker crumbs 1/2 c. corn flake crumbs 1/8 tsp. pepper 1 cut chicken (no skin) 1/2 c. skim milk 2 tbsp. lemon juice 1/4 c. vegetable butter Combine corn flake crumbs, saltine cracker crumbs and pepper. Warm the skim milk. Then add the butter and lemon juice to the milk. Dip the chicken in the milk mixture and then roll in the crumbs. Place chicken pieces in a covered foil lined pan for the first 35 minutes. Remove the cover and bake for an additional 10 minutes. Bake at 350. Option: May sprinkle Parmesan cheese on top for the last 10 minutes of baking. |
