CREAM CHEESE STUFFED CHICKEN
BREAST
 
4 chicken cutlets, split
1 (8 oz.) pkg. cream cheese
Chives

COATING MIX:

1 c. bread crumbs
1 tsp. garlic powder
1/2 tsp. basil and oregano
2 tsp. grated Parmesan cheese

Lay the 4 cutlets (8 pieces) flattened on wax paper. Divide cream cheese into 8 slices. Place a slice on chicken cutlet sprinkle with chives roll up and secure with toothpick Roll in coating mix. Place in slightly greased baking dish. Drizzle with melted butter. Shake on Parmesan cheese. Bake at 375 degrees for 40-50 minutes.

I followed this but did a couple of different things, butterflied my chicken, pounded the breast halves out, then added the cream cheese & rolled. After rolling and attaching toothpick, I dipped in a milk egg mix then into the breadcrumb mixture in your recipe for just a bit more stability.
Next I pan fried in olive oil and butter until brown on all sides, then in a baking dish for about 20 minutes - sprinkling the Parmesan cheese and drizzling with a bit of butter as your recipe states. Absolutely delish! I definitely recommend the pan fry before baking, it gives that extra crunch, next time I make this, I am adding a jalapeno in the middle with the cream cheese. This was the dinner hit of the century in my house! Everyone loved it... thanks for the idea :) Made my night :)

I also butterflied my chicken, smeared whipped cream cheese on this inside and added a little bit of real bacon bits and instead of bread crumbs used cheddar french fried onions with recipe herbs. Delicious!!!
