“AMISH CHICKEN CASSEROLE” IS IN:

AMISH CHICKEN CASSEROLE 
8 oz. broad egg noodles
1/2 cup (1 stick) butter
8 oz. sliced fresh mushrooms
1/3 cup all-purpose flour
2 cups chicken broth
1 cup milk
salt and pepper, to taste
1/3 cup freshly grated Parmesan cheese
2 cups cooked chicken, cut into cubes
generous pinch of rubbed sage

Cook noodles as directed on package. Melt butter and cook mushrooms in a large skillet until lightly browned. Stir in flour and blend in with a fork or slotted spoon. Stir in milk and broth and seasonings; whisk sauce constantly until thickened.

Combine sauce, noodles and chicken. Adjust seasonings to taste. Place in a 2-quart casserole dish. Sprinkle top with Parmesan cheese and bake at 350°F for 30 minutes.

This is by far my go to Chicken Noodle recipe! Until I stumbled upon this recipe, I could not make chicken noodles fit for human consumption! (Anything CM makes I pretty much have in my recipe file. It's like she's my cooking twin.) I use poultry seasoning instead of sage though. My grandkids detest cheese - guess who eats cheese in their chicken and noodles?? Shame on Grandma!! Thanks, CM!

This is just the ultimate in comfort food! My mom made this for us as we were growing up and it was just incredible scooped over creamy mashed potatoes. Mom left out the mushrooms when we were younger but we learned to love them later on. Thank you CM for posting this recipe. Your recipes are always the best!

This with cooked ham, instead of chicken. I used a pinch of dried mustard instead of sage. I didn't have enough mushrooms so I used celery and garden peppers and onion to make the 8 oz. I did everything else the same as the recipe and served with fresh green beans. Really super good! Thanks CM! You are so good!

I have made this dish quite a few times and it's yummy! I substitute sliced black olives for the mushrooms, as I don't eat them! YUMMY!

Love the sauce. Can substitute veggies such as broccoli and cauliflower for noodles for lower carb meal, or 1/2 high protein & fiber noodles & 1/2 veggies.

My wife was home sick and was not up to what I had on the menu. I looked for what I had on hand and had most of these ingredients. I didn't use mushroom. I didn't have sage, so I used poultry seasoning. It was delicious, and my wife liked it too.

Great! I made it as is. Forgot the sage... used trader Joe's papardi noodles and leftover Dutch oven chicken and broth. Used ementeler cheese on top. So good! Thanks!
