SAVORY STUFFED POTATOES 
4 baking potatoes
4 slices bacon
3 scallions, chopped
1/2 red pepper, chopped
3 oz. cheddar cheese, shredded (1/3 c.)

Scrub potatoes; pierce several times with fork. On paper towel arrange potatoes in microwave oven. Cook on high, turning once, 16 minutes or until potatoes are fork tender.

Meanwhile, in large skillet cook bacon according to package directions. Remove with slotted spoon. Drain on paper towels. To drippings remaining in skillet, add to cook scallions and pepper. Cook 2 minutes or until tender. Crumble bacon.

To serve, partially cut top of each potato. Scoop out pulp, leaving 1/4" around skin. Set potato skins aside. In medium bowl combine warm potato filling, vegetables, bacon and cheese. Evenly divide potato mixture into shells. Serve hot. Makes 4 servings. 415 calories per serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
