MEXICAN SALAD 
2 c. lettuce
2 c. kidney beans
2 med. tomatoes
2 tbsp. green chilies
1/2 c. ripe olives
1 lg. avocado
1/2 c. sour cream
2 tbsp. Italian dressing
1 tsp. instant minced onion
1/4 tsp. salt
3/4 tsp. chili powder
Dash pepper
1/2 c. shredded cheese
1/2 c. corn chips

Combine shredded lettuce, drained beans, chopped and drained tomatoes, chopped chilies and sliced olives; then chill.

Combine mashed avocado, sour cream, salad dressing, onion and seasonings. Mix well and chill.

Season chilled lettuce mixture with additional salt and pepper; toss lightly with the avocado dressing. Top with grated cheese and crushed corn chips. Garnish with sliced olives. Enjoy!
