COCONUT CREAM PIE 
1/4 c. flour
1/4 tsp. salt
3 eggs, separated
1/2 tsp. vanilla
1/2 c. sugar
1 1/2 c. milk
2 tbsp. butter
Baked 8 or 9 inch pie shell

Mix flour, sugar and salt in pan; add milk and stir well. Cook over medium heat until thick and smooth, stirring constantly. Beat egg yolks, stir in a little of the hot mixture and pour back in hot mixture; continue cooking 2 minutes longer, stirring constantly. Remove from heat and add butter and vanilla. Beat egg whites until light, gradually beat in 6 tablespoons sugar until stiff.

Into pie mixture, add 1/2 cup coconut and 1/3 of the meringue. Mix well. Pour into pie shell. Cover with remainder of meringue. Sprinkle coconut on top of pie and bake 12 to 15 minutes in 350 degree oven.
