RHUBARB CUSTARD PIE 
1 unbaked pie crust
3 eggs, beaten
3 tbsp. milk
1 3/4 c. sugar
4 tbsp. flour
1/4 tsp. cinnamon
1 tsp. vanilla
4 c. rhubarb, cut up
2 tbsp. butter

Combine eggs, milk, sugar, flour, cinnamon and vanilla. Add rhubarb pieces to above and stir in. Pour into unbaked pie crust, dot with butter. Top with crust or lattice strips of crust. Brush with milk and sprinkle with sugar. Bake at 400 degrees for 45 minutes or until golden brown.
