RHUBARB CUSTARD PIE 
1 unbaked pie shell
3 c. rhubarb, finely cut up
1 1/4 c. sugar
3 tbsp. flour
2 tbsp. butter
2 eggs

Combine sugar, flour, butter, and eggs; mix well. Put rhubarb in pie shell. Pour egg mixture over rhubarb. Bake 10 minutes at 400 degrees and 30 minutes at 350 degrees. Can put lattice on top, if desired.
