FRESH TOMATO RELISH 
2 tomatoes (wedge shape)
1 or 2 hot peppers
1 sweet onion
1 tsp. salt
3 to 4 tbsp. sugar
Vinegar
Fresh cauliflower slices (optional)
Bell pepper slices (optional)

Finely chop tomatoes, hot peppers and onion. Add cauliflower and bell pepper, if desired. Place in a jar or Tupperware vegetables, salt and sugar. Cover with vinegar and cover container. Store in refrigerator. Let marinate for 2 or 3 days. Enjoy!
