1 c. dried cow peas 4 c. water 1 med. onion (optional) 1/2 lb. bacon, thick sliced or cut in chunks 1 c. raw long grain rice 1 tsp. salt Black pepper to taste 2 tbsp. butter Check peas over for foreign objects, i.e. stones, peas with holes, etc. Discard. Wash well in cold water. Cook peas, bacon and onion in 2 quart covered saucepan and bring to a boil. Reduce to a simmer and cook the peas, covered, until just barely tender, about 1 hour 45 minutes. You may have to add additional water during cooking process. Do not allow peas to dry out. When peas are tender, check seasoning for taste, then add rice along with butter. Cover and bring to a boil, stir once or twice with fork until liquid is absorbed. Cook, covered 15 to 20 minutes. Serves 4 to 6 persons. |
