HOMEMADE SALAMI 
5 lbs. lean ground beef
1 tsp. hickory smoked salt
5 rounded tsp. Morton's Tender Quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. pepper
2 1/2 tsp. garlic salt

Mix well with hands; cover and refrigerate for 3 days. Take out and mix well again. Return to refrigerator.

The fourth day, make into rolls firmly pressing together. Put on broiler rack. Bake at 150 degrees uncovered for 8 hours, turning once at 4 hours. Can be frozen.
