STREUSEL FILLED COFFEE CAKE | |
1 1/2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1/2 c. sugar 1/4 c. shortening 1 egg 1/2 c. milk 1 tsp. vanilla STREUSEL FILLING: 1/2 c. brown sugar 2 tbsp. flour 2 tsp. cinnamon 3 tbsp. butter, melted 1/2 c. nuts, chopped Mix together dry ingredients. Cut in shortening, mixing with fingers until fine like cornmeal. Blend well: beaten egg with milk and vanilla. Add to dry ingredients. Stir just until well moistened. Mix filling in separate bowl. Spread 1/2 of cake batter in greased and floured 8 inch square cake pan. Sprinkle 1/2 of filling over this. Add remaining batter and sprinkle with remaining filling. Bake at 375 degrees for 25 to 30 minutes. |
