PIE FILLING COFFEE CAKE 
2 sticks butter
1 3/4 c. sugar
4 eggs
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt

Cream butter and sugar. Add eggs, 1 at a time and beat between each egg. Add vanilla. Sift flour, baking powder and salt together and blend in and mix well. Save 1 1/2 cups of the batter to put in "dabs" on top of filling. Spread the remainder in a greased jelly roll pan. Spread favorite pie filling over dough. Dab on remaining batter on top of pie filling. (Will not completely cover.) Bake at 350 degrees for 40 to 45 minutes. When cool, sift a little powdered sugar on top. (Or spread with powdered sugar glaze.)
