FLUFFY HOT CAKES 
1 egg
3/4 c. plus 2 tbsp. milk
2 tbsp. melted shortening
1 c. sifted flour
2 tbsp. sugar
2 tbsp. baking powder
1/2 tsp. salt

Beat all ingredients until smooth. Pour small amounts into hot greased iron skillet, turning only once. Serve with homemade pear preserve syrup or Karo.
