POTATO DOUGHNUTS 
2 c. sifted enriched all-purpose flour
1 1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. nutmeg
1 c. riced potato
1 tbsp. butter
2 eggs
1 c. granulated sugar

Sift together first 4 ingredients. Place potatoes in mixing bowl; add butter; stir until blended. Cool to lukewarm; add eggs and sugar; mix well. Stir in the sifted flour mixture, mix until smooth. Turn out on floured board, roll 1/2" thick. Cut with doughnut cutter. Fry doughnuts in 1 1/2" fat heated to 370 degrees. As doughnuts rise to surface, turn. Turn until golden brown. Remove and drain on brown paper. Dust with sugar. Makes 2 1/2 dozen.
