POTATO DOUGHNUTS 
2 pkg. yeast
1 c. warm water (from potatoes)
1 1/2 c. mashed potatoes (3 or 4 med.)
1 c. sugar
5 to 6 c. flour (or enough to make a soft dough)
1 c. shortening
1 c. milk
2 eggs
1 tsp. salt

Soak yeast in warm water; add potato and sugar. Let stand 1 hour in warm place. Add shortening warmed in milk then add eggs, salt and flour. Knead the bread. Let raise about 1 hour. Roll out and cut or shape.

Let raise as desired (about 1 hour). Bake in 350 degree oven about 15 minutes or until light golden brown. Frost and dip in chopped nuts. You may use instant potatoes, too! 3 dozen.
