RAISIN FILLED COOKIES 
1 c. shortening
2 c. brown sugar
2 eggs
2 c. flour
1 tsp. baking soda
1/2 c. hot water

FILLING:

1 tbsp. vinegar
2 c. raisins
2 c. water
1 1/2 c. brown sugar
3 tbsp. flour

Cook filling until thick. Cool overnight.

Mix other ingredients. Make a soft dough. May need more flour. Refrigerate overnight. Roll out dough. Cut circles with cookie cutter. Put heaping teaspoon raisin mixture on bottom circle, cover with top circle and crimp together. Bake at 375 degrees for 15 minutes.
