EASY FILLED RAISIN COOKIES 
1 c. soft shortening
2 c. brown sugar
2 eggs
1 c. water or buttermilk
1 tsp. vanilla
3 1/2 c. plus tbsp. flour
1/2 tsp. salt
1 tsp. baking soda
1/8 tsp. cinnamon
1 c. raisins
1/2 c. sugar

Mix shortening, brown sugar, and eggs; stir in water and vanilla. Sift together 3 1/2 cup flour, soda, salt, and cinnamon. Drop by teaspoonfuls on greased baking sheet. In saucepan combine raisins, 1/2 cup water, sugar, and 1 tablespoon flour and boil until mixture is thick. Place 1/2 teaspoon filling on dough and cover with 1/2 teaspoon dough. Bake at 400 degrees for 10-12 minutes or until lightly browned.
