HAM AND POTATO CASSEROLE 
6 med. potatoes, peeled and thinly sliced
1 tsp. salt
1 1/2 c. cubed ham, cooked
1 c. chopped onions
1 c. green pepper strips
1 (10 3/4 oz.) can cream of celery soup
Pepper to taste
1/2 c. shredded low cholesterol cheese
1/4 c. skim milk, if needed

Arrange half the potato slices in baking dish that has a tight-fitting cover. Make layers; add half the ham, onions, and green peppers. Repeat.

Empty celery soup over all. Add salt and pepper on top. Bake covered at 350 degrees for 1 hour to 1 1/2 hours or until potatoes are done. If it seems dry, add the skim milk.

I also add a favorite vegetable when layering.
