DEBORAH'S SWEET & SOUR CHICKEN 
1/2 c. sugar
2 tbsp. cornstarch
1/2 c. white vinegar
8 oz. can pineapple chunks, save juice
1/4 c. soy sauce
1/2 tsp. salt
1 tsp. minced garlic
1/2 tsp. paprika
1/2 tsp. ground ginger
1 c. chopped celery
1C. chopped onion
3 c. cooked, diced chicken
1 c. chopped green pepper
1-4oz. can mushrooms, drained
2 c. regular, uncooked rice
1-8oz. can sliced water chestnuts, drained

In medium saucepan, combine sugar and cornstarch; stir in vinegar, juice from pineapple, soy sauce, salt, garlic, paprika, ginger, celery and onion. Bring to a boil; reduce heat. Simmer, stirring constantly until thickened.

Remove from heat. Stir in pineapple chunks, chicken, pepper, mushrooms and water chestnuts.

Prepare rice according to directions.

Serve over prepared rice.
