POTATO CHIP COOKIES 
1 lb. unsalted butter
1 c. sugar
2 tsp. vanilla
3 1/2 c. sifted flour
2 1/2 c. crushed potato chips

Cream butter and sugar together until fluffy. Add vanilla and flour and beat until well blended. Add potato chips. Drop by teaspoon onto ungreased cookie sheet and bake 13-15 minutes or until golden brown in 350 degree oven. Should make about 10 dozen cookies.

NOTE: Avoid salted butter because the chips have enough salt for the recipe.
