ORANGE CARROT COOKIES 
3/4 c. shortening
1 c. sugar
1 egg
1 tsp. vanilla
1 c. cooked, mashed carrots
1 tsp. baking powder
1/2 tsp. salt
2 c. flour
1 c. nuts

Cream shortening, sugar and egg; add vanilla. Mix together the baking powder, salt and flour. Add flour mixture alternately with carrots, mixing well. Drop on greased baking sheet.

Bake at 375 degrees for 10 to 12 minutes.

Frost with the following Orange Frosting: 1 c. powdered sugar Pinch of salt

Beat well and ice cookies while hot. These cookies are also good with 1/2 cup of coconut added.
