COCONUT HOMESTEAD COOKIES 
1 c. unsifted all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. butter, room temperature
1/2 c. sugar
1/2 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
1/2 c. quick cooking oats (or regular)
1 c. chopped peeled apples
2 c. coconut

Mix flour with baking powder, salt and soda. Beat butter; gradually beat in sugars until light and fluffy. Blend in egg and vanilla. Blend in flour mixture; add oats, apple and 1 1/3 cups of coconut. Drop from teaspoons onto ungreased baking sheets. Sprinkle with remaining coconut. Bake at 375 degrees about 10 minutes or until golden.

Jumbo: Use 1/4 cup dough for each cookie. Slightly flatten; bake for 15 minutes or until golden. Cool 2 minutes before removing.

Bar Cookies: Spread dough in a greased 13 x 9 inch pan. Bake for 25-30 minutes. Cool, cut into squares.
