COCONUT COOKIES 
3/4 c. sugar
3/4 c. brown sugar, firmly packed
1/4 c. oil
1/2 tsp. vanilla
1 (5 1/8 oz.) pkg. chocolate pudding & pie filling (not instant)
1 (8 oz.) sour cream
1 1/2 c. rolled oats
2 c. flour
2 egg whites
1/2 tsp. baking soda
1/2 tsp. salt
2 c. chopped pecans
1 (12 oz.) pkg. chocolate chips

Preheat oven to 375 degrees. Grease pans. Mix sugar, brown sugar, oil, eggs, vanilla, pudding mix and sour cream. Mix at low speed until moist. Beat 2 minutes at medium speed. Add flour (level off), oats, soda, and salt. Beat at medium speed. Stir in pecans and chocolate chips. Spoon by teaspoon and bake 6 to 7 minutes.
