“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

These were one of the BEST pancakes I've ever eaten! WOW. I did tweak the recipe a bit by putting three ingredients in place of 1 cup of flour (King Arthur Unbleached all purpose flour filled up most of the cup. Then I put some Rye flour and Wheat Germ in it too)and I also substituted olive oil for the vegetable oil. I added molasses to it too. So when I bit into the fluffiness, I tasted the soothing flours and aromatic vanilla with rustic molasses, cool olive oil, and warm enticing cinnamon. My measurements were not exact, but without your guidelines, I couldn't have made this delicacy!

I added about 1 tsp. of salt and used all purpose flour that is all I had with a very Lil whole wheat flour and they came out surprisingly good I also added blueberries. I didn't like the lumps in the batter my suggestion use whole wheat flour if you have it on hand.
