2 c. mashed sweet potatoes
1 c. sugar
1/2 c. coconut
Pinch of salt
1 egg
1 c. milk
1 tsp. vanilla

Mix and place in casserole dish. Cook 35 minutes at 350 degrees.

TOPPING:

1/2 c. sugar
1 sm. can pineapple, undrained
2 tbsp. cornstarch
1 (8 oz.) jar cherries, drained & split

Mix and cook until glazed. Pour over potatoes and cook 10 minutes longer at 350 degrees.
