TACO CASSEROLE | |
6 c. tortilla chips, crushed 1 pkg. taco seasoning mix 1 lb. ground beef 1 cup sour cream 1/4 c. chopped onion 1 cup shredded Mozzarella cheese 1 8-oz. can tomato sauce Chopped lettuce and tomato 1/2 c. water Brown ground beef and onions; drain fat. Add tomato sauce, water and taco seasoning. Simmer 5 minutes. In a 1-1/2 quart casserole dish, layer ingredients in this order: chips (3 cups), all the ground beef mixture, sour cream, Mozzarella cheese, and remaining chips. Bake at 350°F for 15 minutes. Serve topped with lettuce and tomatoes. Note: This can be made the night before and cooked in 15 minutes for the next day's dinner. Just leave off the top layer of chips until you are ready to put it in the oven. Great "working Mom's" dish and it is delicious. Since we like spicy food, I add one or more teaspoons of chopped chili powder, Mexican spice mixture, one or more varieties of finely chopped chile peppers. You an also add chopped bell pepper in different colors for extra color. |
