SPINACH-BEEF MANICOTTI 
1/2 c. chopped onions
1/4 c. butter
3/4 lb. fresh spinach, torn into 1 inch pieces
2 cloves garlic
2 tsp. oregano
1 tsp. salt
1/4 tsp. pepper
2 c. diced cooked beef
12 manicotti shells
1 jar tomato sauce

Saute chopped onions in butter for 3 minutes or until tender. Add spinach, garlic, salt and pepper. Cook, stirring, 3 to 5 minutes or until spinach is just tender. Remove from heat; then add beef. Set aside.

Parboil 12 manicotti shells according to package directions. Fill shells with spinach-beef mixture. Place filled shells in an ovenproof serving dish. Cover completely with tomato sauce. Bake at 350 degrees for 25 to 30 minutes or until shells are tender and filling is hot.
