BASIC CORN BREAD 
2 c. cornmeal
1 tbsp. sugar
1 egg
1 tbsp. flour
1 tsp. salt
1/2 tsp. baking soda
1 1/4 c. buttermilk or 1 c. evaporated milk
Cooking oil

Preheat oven to 400 degrees. In bowl, mix dry ingredients (if you use self-rising meal, omit salt and soda). Add egg and 2 tablespoons oil. Mix well. Put pan in oven. When hot, pour mixture in pan. Let cook until golden brown, 20-30 minutes.
