LINGUINE WITH OIL, GARLIC AND
ANCHOVIES
 
1/2 lb. linguine
2 tbsp. olive oil
1 tbsp. safflower oil
2-3 cloves garlic, minced
4 anchovy fillets
Hot pepper flakes to taste

Boil pasta in a large pot. Meanwhile, heat the 2 oils in a medium pot, then add garlic, anchovies and hot pepper. Stir and as garlic begins to color, add about 1/2 cup of the pasta water, mixing well. The anchovies will break up. When pasta is cooked, drain it, then add it to the sauce, tossing to coat thoroughly.

This is a nice side dish to broiled fish or chicken.
