BLACKBERRY PUDDING | |
PUDDING: 1 c. flour 1 c. blackberries 1 c. sugar 1 egg Pinch of salt 1/2 tsp. baking soda 2 tbsp. buttermilk 2 tbsp. shortening 1 tsp. allspice Fresh, frozen or canned blackberries may be used in this recipe. If using canned blackberries, drain off juice. Mix all ingredients for pudding and beat together. Pour into greased 8-inch square baking pan. Bake at 350 degrees for 25 minutes or until firm to the touch. Prepare filling after removing pudding from oven. FILLING: 1/2 c. sugar 3 tbsp. flour 1 tbsp. butter 1/2 c. milk 2 egg yolks Pinch of salt 1/2 tsp. vanilla Mix flour and sugar well. Add beaten egg yolks, milk, butter and salt. Cook in double boiler until thick. Add vanilla. Spread on pudding. Top with meringue made of the following: 2 egg whites beaten together with 4 tablespoons sugar. Brown in 425 degree oven. |
