TEXAS CORNBREAD 
2 c. self-rising corn meal
3 eggs, beaten
3 tbsp. sugar
1 tsp. salt
3/4 c. corn oil
1 (8 oz.) container sour cream
3/4 c. grated cheddar cheese
1 can corn (cream or whole)
1 lg. onion, chopped
1 med. green pepper, chopped

Mix all in large bowl. Heat pan in oven with 3 tablespoons shortening. Sprinkle with flour. Add mixture and bake 1 hour at 350 degrees. Let stand 15 minutes before serving.
