CALICO BEANS | |
1/2 lb. bacon, diced 1/2 lb. ground beef 1 c. onion, chopped 1/2 c. ketchup 1 tsp. dry mustard 1 tsp. salt 1/2 c. white sugar 1/2 c. brown sugar 2 tsp. vinegar 1 can pork and beans (undrained) 1 can butter beans, drained 1 can green beans, drained 1 can kidney beans, drained Drain and coarsely chop tomatoes. Reserve liquid. Mix together tomatoes and reserved liquid, onion, green beans, okra, green pepper, lemon juice and herbs. Cover and bake at 325°F for 15 minutes. Mix in zucchini and eggplant and continue baking, covered, 60 more minutes or until vegetables are tender. Stir occasionally. Sprinkle top with Parmesan cheese just before serving. Note: If fresh herbs are unavailable, substitute 1 teaspoon dried crushed basil and 1/2 teaspoon dried crushed oregano. Also, half of a 10 ounce package frozen okra may be substituted for the fresh. Nutrition (per serving): 36 calories. |
