SWEET POTATO CASSEROLE 
1 (18 oz.) can sweet potatoes, drained
1 c. granulated brown sugar, substitute divided
1/4 c. skim milk
1 egg
1 tbsp. reduced calorie butter, melted
1 tsp. vanilla extract
Vegetable cooking spray
1 tbsp. all-purpose flour
1 tbsp. reduced calorie butter

Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat health.

Combine potatoes, 3/4 cup sugar substitute, milk, egg, melted butter and vanilla, stirring until well blended. Spoon into a shallow baking dish coated with cooking spray.

Combine flour and remaining sugar substitute. Cut in 1 tablespoon butter until crumbly. Sprinkle over potatoes and bake at 350 degrees for 35 minutes. Serving amount 1/3 cup. Exchanges 1 starch. Cholesterol 44 mg. Calories 85. Carbohydrate 13 gm. Protein 2 gm. Fat 3 gm. Fiber trace. Sodium 86 mg.
