EGGS RANCHEROS 
8 eggs
1 1/2 tbsp. chopped garlic
2 tbsp. chopped onion
1 c. refried beans
1/2 c. chopped bell pepper
Salt to taste
Pepper to taste
1 1/2 lb. ground chuck
8 tbsp. chili powder
1/2 lb. grated cheddar cheese
1/4 c. olive oil
1 avocado, sliced

Heat olive oil to medium heat. Simmer onions, garlic, bell pepper until onions and garlic are transparent. Divide herb mixture in half, leaving 1/2 in pan. Brown ground beef with herbs in pan. Add 6 tablespoons chili powder to mixture. Set aside. Heat refried beans and mix in remaining 2 tablespoons chili powder, set aside. Scramble 2 eggs per serving in frying pan. As eggs are close to done, add bean mixture, 2 slices of avocado, and herb mixture into center of egg. Fold over to form envelope. Put on plate cover with ground beef mixture and top with cheese. Repeat the process for 3 more servings.
