POTATOES RANCHERO 
1/4 c. butter
1/4 c. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
3/4 c. chopped green onion
8 oz. sharp cheddar cheese, shredded
6 c. sliced, cooked potatoes
1 green pepper, cut in rings
1/2 c. barbecue sauce

Make cream sauce with butter, flour, milk and seasonings. Add onions and cheese; stir until cheese is melted. Alternate layers of potatoes and cheese in a 12 x 8 inch baking dish. Top with green pepper rings and barbecue sauce. Bake at 350 degrees for 25 to 30 minutes. Makes 8 servings.
