GARLIC OIL PASTA | |
1 med. clove garlic 3 tbsp. olive oil 1 1/2 c. grated Parmesan cheese 8 oz. pasta of choice 1 egg yolk Salt and pepper Crush the garlic in a small saucepan and add oil. Keep warm. Cook and drain pasta and return to cooking pot. Add a small amount of cheese to the pasta and toss until melted. Continue doing this until all the cheese is used. Add the egg yolk and salt and pepper and toss again. Discard the garlic from the oil and pour into a warmed serving bowl. Add the pasta and toss well. Serve at once. Serves 4. |
