APPLE PIE FILLING 
4 1/2 c. sugar
3 tbsp. lemon juice
5 1/2-6 lb. apples, peeled, cored & sliced
2 tsp. cinnamon
1 c. cornstarch
1/4 tsp. nutmeg
2-3 drops yellow food coloring (optional)
1 tsp. salt

In large pan blend sugar, salt and cornstarch. Stir in 10 cups water; cook and stir until thickened and bubbly. Add lemon juice (food coloring). Pack apples in jar, leaving 1 inch head space. Fill with hot syrup, leaving 1/2 inch head space. Adjust lids. Process in boiling water. Pints 15 minutes - quarts 20 minutes. 6 quarts.
