GERMAN GREEN SALAD 
1 to 1 1/2 lbs. iceberg or leaf lettuce
3/4 c. thinly sliced cucumbers
3/4 c. sliced green onions, including stalks
2 tbsp. chopped parsley
3 slices bacon, about 1/3 c.
2 tbsp. bacon grease
4 tbsp. vinegar or lemon juice
1 tbsp. sugar
3/4 tsp. salt
1/8 tsp. pepper

Break lettuce into small pieces, put into a large bowl, add cucumbers, onions, and parsley and toss well.

DRESSING: Fry bacon until crisp, break into small pieces and add to salad. Mix bacon grease, vinegar, salt, sugar, and pepper together and beat with a fork until mixture is creamy. Pour over salad and toss well. 4 servings.
