POULET SAUTE AUX CHAMPIGNONS A
LA CREME
 
1 cut up frying chicken
1/2 lb. fresh mushrooms
Butter, flour, heavy cream

Season the pieces of chicken, roll in flour, dip in cream, roll in flour again. Brown all around in butter, add sliced mushrooms to the pan, cover, reduce heat and cook slowly until chicken is nearly tender. Remove to a baking dish, pour over heavy cream (about 1 cupful) dust with paprika (the hot Hungarian type) and leave in a 375 degree oven until cream thickens. Tasty, huh?
