SEAFOOD FETTUCCINI | |
1 lg. clove garlic, chopped 1/4 lb. butter 6 green onions, chop greens & white separately White cooking wine (opt.), to taste Half & half (lg. carton) 1/2 lb. chopped broccoli 1 lb. shrimp, frozen, uncooked 1/2 lb. fresh bay scallops 1/2 lb. crab meat Fettuccini Spices & Parmesan cheese Saute garlic and white parts of onion in 1/4 pound butter. Saute scallops and shrimp until done (shrimp will curl up and turn white). Gradually add wine and half and half (I use 1/2 carton for 1 package fettuccini and all for 2 packages). I use 2 to 3 teaspoons seasoning (blackened fish) and sprinkle Parmesan cheese to taste. Add precooked broccoli bits, green parts of onion, and crab meat and heat slowly. DO NOT BOIL. Mix well. Serve over fettuccini (2 packages will serve 6 to 8). |
