CAULIFLOWER AU GRATIN 
1 cauliflower, 2 1/2 lbs.
1/2 tsp. sugar
1/2 tsp. salt
1 1/2 c. Bechamel Sauce
3 tbsp. grated cheese
2 tbsp. fine bread crumbs
1 tbsp. melted butter

Cook cauliflower with salt and sugar. Separate the flowers. Arrange in baking dish. Pour sauce over vegetables. Sprinkle with cheese, bread crumbs and butter. Place under broiler for a few minutes until golden or bake 1/2 hour at 300 degrees.

BECHAMEL SAUCE:

2 tbsp. melted butter
3 tbsp. flour
1 1/2 c. milk
Salt to taste
1/2 tsp. lemon juice
2 egg yolks

Mix butter with flour over low heat. Gradually stir in the milk. Bring to a boil, stirring constantly. Remove from heat and add salt and lemon juice. Stir a few tablespoons of the sauce into egg yolks, then combine.
