1 1/2 c. sugar
1 c. butter
2 c. flour
4 eggs
1 tbsp. lemon juice or extract
1 can pie filling (any fruit)

Gradually add sugar to butter, creaming at medium speed. Add eggs one at a time, beating well at low speed. Add flour and lemon juice or extract; mix again. Grease cookie sheet and pat dough in pan. Spread evenly. Mark off 20 squares; pour one heaping tablespoon of pie filling in each square, onto dough.

Bake at 350 degrees for 35-45 minutes. Sift confectioners sugar on top (may want to cover with little papers over filling so you just decorate the crust part of the cake).
