BANANA BREAD 
1/2 c. butter, softened
1 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. mashed banana
1/2 c. sour cream

Mix butter and sugar until creamy, add eggs one at a time. Add vanilla, flour, baking soda and salt. Mix until incorporated, but careful not to over-mix. Stir in mashed banana and sour cream. Pour into greased bread pan and bake in preheated 350°F oven for 50 to 55 minutes, or until toothpick in the center of the loaf comes out clean.
