ARTICHOKES WITH MINTED PEAS | |
Prep 20 Min. + Chilling/Cook 0 1/2 c. Miracle Whip Free Dressing 1/4 c. loosely packed fresh mint leaves, finely chopped 1 tbsp. lemon juice 1/2 tsp. minced garlic 1 (10 oz.) pkg. Birds Eye Peas, thawed, drained 1 sm. cucumber, peeled, seeded, chopped 3 (14 oz.) cans artichoke bottoms, drained Mix together dressing, mint, juice and garlic until well blended. Stir in peas and cucumbers; mix well. Chill. Remove thin slice from each artichoke bottom. Fill each bottom with approximately 2 tablespoons pea mixture. Approximately 1 1/2 dozen. Only 40 calories per artichoke. |
