AU GRATIN OF CABBAGE | |
1 head cabbage 2 c. water 1 tsp. salt 1/4 tsp. pepper 3 tbsp. butter, cut up 1/2 c. grated Swiss cheese 2/3 c. fresh bread crumbs Cut cabbage in half; remove core. Cut crosswise into 1/2 inch slices. Place shredded cabbage in a pot and add the 2 cups of water. Bring to boil, cover and simmer for about 20 minutes. Cabbage should be wilted, soft, but still firm and most of water should have evaporated. Pour into 10-inch baking dish. Sprinkle with salt and pepper, butter and Swiss cheese. Sprinkle with bread crumbs and bake in 400 degree oven for 25 minutes. Makes 8 servings, 110 calories each. |
