SCALLOPED CABBAGE AU GRATIN 
3 c. shredded cabbage (not too fine)
3 tbsp. flour
3 tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
3/4 c. grated sharp cheese
1/2 c. buttered crumbs

Cook cabbage in a small amount of water with a little salt and a pinch of sugar. Do not overcook. Prepare white sauce: Melt butter; add flour, salt, pepper and milk, stirring milk in gradually. Cook until thickened. Drain any water left in cabbage. Alternate layer of cabbage, grated cheese, and white sauce in greased casserole dish. Top with buttered crumbs. Bake in 350 degree oven for 20 minutes or until crumbs are delicately browned.
