CARAMEL PIE | |
3 1/2 c. sugar 4 tsp. butter 1/4 c. water 2 tsp. vanilla 2 baked 9 inch pie shells 4 tsp. flour 6 eggs, separated 4 c. milk 1/8 tsp. salt Caramelize 1/2 cup sugar in a skillet over medium heat until light brown. Add water, cook until all hardened particles are melted set aside. Mix 2 cups sugar, flour, milk, butter and 1 tsp. vanilla in double boiler. Cook until mixture begins to thicken. Add small amounts of mixture to beaten egg yolks. Add egg yolks to mixture in double boiler. Cook until thick. Cool. Pour into baked pie shells. Beat egg whites until soft peaks form. Add remaining sugar, continuing to beat. Add salt and remaining sugar. Spread on pie. Bake at 250 degrees or 300 degrees for 15 minutes. |
